Jack Monroe's prawn etouffee


Ingredients

  1. 4 fat cloves of garlic, minced (12p)
  2. 1 onion, sliced finely (9p)
  3. 2 tbsp oil (6p)
  4. 200g peppers, sliced (40p)
  5. 1 red chilli, sliced (9p)
  6. 2 rounded tbsp flour (6p)
  7. 1 level tbsp paprika (10p)
  8. 500ml chicken stock (2p)
  9. 1 tbsp mixed dried herbs (10p)
  10. 400g chopped tomatoes (31p)
  11. 300g prawns (£2.25)
  12. Fistful of parsley (20p)
  13. Salt and black pepper (2p)

Cooking Procedure

  1. Saute the garlic and onion in the oil on a medium heat for a few minutes. 
  2. Add the peppers and chilli and cook low and slow until it all start to soften.
  3. Add the flour and paprika, and stir quickly to make a rough paste. 
  4. Add a little splash of stock to loosen, and beat to smooth out any lumps. 
  5. Repeat, adding enough stock to thin to a gravy consistency. 
  6. The sauce will thicken as it heats, so don't worry if you have a lot of stock left – you can add it later.
  7. Stir in the mixed herbs, then add the tomatoes. 
  8. Bring to the boil, reduce to a simmer, then leave for 20 minutes, stirring occasionally.
  9. Add the prawns and heat through.
  10. Remove from the heat, add the parsley and generously season and serve with rice.

Pork and Beans Casserole


Ingredients
  1. 250 grams ground pork
  2. 1 medium size onion (chopped)
  3. 15 ounces pork & beans
  4. 1/2 cup tomato sauce
  5. 1 green chilli (chopped)
  6. 125 grams tortilla chips
  7. 1/4 cup shredded cheddar cheese
  8. 1 teaspoon salt
  9. 1/4 teaspoon ground pepper
  10. 2 corn (grated)
  11. 1/4 cup condensed milk
Cooking Procedures

  1. Saute onion & ground pork. Add 1/2 cup of water, boil till tender.
  2. Add the pork & beans, tomato sauce, chilli, salt, pepper & corn. Cook for 5 minutes.
  3. Remove from the fire. Mix with milk & place it in a baking pan (350 degrees °F) for 3 minutes.
  4. Take-out in the oven & add cheese. Put back for 1 minute or till cheese melt.
  5. Add tortilla chips on top before serving.

Corned Beef Patty


Ingredients
  1. 1 cup corned beef
  2. 2 big potatoes (sliced in cubes)
  3. 1/4 cup parsley (sliced)
  4. 1 onion (minced)
  5. 1/4 cup green chilli (sliced)
  6. 1 pc. beef cube (melted in 1/4 cup water)
  7. 2 eggs.
  8. 1/2 cup bread crumbs
  9. cooking oil
  10. flour (if needed)
Cooking Procedures

  1. Combine the corned beef, potatoes, parsley, onion, green chili, melted beef cube,
  2. Add flour if the combined ingredients is too wet.
  3. Mold the combined ingredients to hamburger patty shape.
  4. Roll it to bread crumbs & fry.

How to Cook Meat Loaf ?


Ingredients
  1. 1/2 kilo ground beef
  2. 1 egg
  3. 1 cup evaporated milk
  4. 1 teaspoon salt
  5. 1/4 teaspoon ground pepper
  6. 1 cup breadcrumbs
Cooking Procedures

  1. Preheat the oven to 350°F & wipe the baking pan with oil. 
  2. Mix ground beef, egg & milk.
  3. Add breadcrumbs, salt & pepper. Mix well.
  4. Mold like a loaf bread & put into the baking dish.
  5. Cook for 1 hour or till done.



Spare Ribs Barbecue


Ingredients
  1. 1/2 kilo pork spare ribs
  2. 1 1/2 cup tomato sauce
  3. 1 thumb size ginger (pounded)
  4. 1 tablespoon soy sauce
  5. 1 teaspoon ground pepper
  6. 2 tablespoon brown sugar
  7. 1/2 teaspoon salt
  8. chili sauce
Cooking Procedures

  1. Mix all the ingredients well & let it soak overnight.
  2. Preheat the oven to 400°F. 
  3. Cook the spare ribs. Wipe with the soaked liquid so that it will not dry while cooking.

How to Cook Pork Sate ?


Ingredients
  1. 1/2 kilo pork meat (sliced)
  2. 5 tablespoon lemon juice
  3. 5 cloves of garlic (chopped)
  4. 1/2 cup peanut butter
  5. 6 tablespoon soy sauce
  6. 1 tablespoon salt
  7. 5 tablespoon brown sugar
  8. barbeque stick

  1. Mix all the ingredients well & let it soak overnight.
  2. Skew the meat on the stick.
  3. Grill the meat.
  4. Wipe with the soaked liquid so that it will not dry while grilling.



How to Cook Ham ?


Ingredients
  1. 2 kilos smoked ham (no skin & fats)
  2. 1/2 cup honey
  3. 1/2 cup brown sugar
  4. 1 tablespoon nutmeg
  5. 1 teaspoon crushed cloves
  6. 1 teaspoon cinnamon
Cooking Procedures
  1. Preheat the oven to 325 degrees °F.
  2. Place the ham in the oveb for 1 hour & 20 minutes.
  3. Combine brown sugar, nutmeg, cloves & cinnamon in one bowl.
  4. Take-out ham from the oven and put on honey & the combined sugar, nutmeg, cloves & cinnamon.
  5. Put back the ham inside the oven & cook for 1 hour without cover.




Waldorf Salad



Ingredients
  1. 1/2 kilo chicken meat (boiled & sliced)
  2. 1 cup mayonnaise
  3. 1 apple (sliced in square shape)
  4. 100 grams seedless grapes
  5. 1/4 cup celery (chopped)
  6. 1/2 cup walnuts (chopped)
  7. 1/2 teaspoon salt
  8. 1/2 teaspoon pepper

  1. Mix all the ingredients well.
  2. Serve cold.

How to Prepare Coleslaw?




Ingredients
  1. 1/4 kilo cabbage (shredded)
  2. 2 carrots (shredded)
  3. 1/4 cup sugar
  4. 1/2 cup mayonnaise
  5. 1/4 cup crushed pineapple (drained)
  6. 1/2 teaspoon salt
  7. 1/4 teaspoon pepper

Corned Beef Hash

Corned Beef Hash


 Ingredients
  1. 250 grams corned beef
  2. 200 grams potatoes (sliced in cubes)
  3. 1 teaspoon salt
  4. 3 cups of water
  5. 20 grams butter
  6. 1 medium size onion (minced)
  7. 80 ml heavy cream or whipping cream
  8. 1/2 teaspoon salt & 1 pinch black pepper (OR according to your taste preference)

Cooking Procedures
  1. Pour water in a kettle & add potatoes with 1 teaspoon salt. Boil in 5 minutes.
  2. Drain & set aside.
  3. Heat  and melt the butter in a wok. Saute onion.
  4. Add the potatoes & cook for 2 minutes or until light brown.
  5. Add the corned beef & mix well. Cook for 5 minutes.
  6. Add the heavy cream & cook for 2 minutes.
  7. Add salt & black pepper. Mix well & serve.

Spinach, Mung Bean and Millet Burgers




Ingredients
  1. 1/2 cup cooked mung beans
  2. 1/2 cup cooked millet
  3. 3/4 cups fresh spinach, washed and stems trimmed
  4. 2 large leeks, cleaned and sliced
  5. 2 cloves garlic, roughly chopped
  6. 3 tablespoons ground flaxseed
  7. 1 1/2 teaspoon ground cumin
  8. 1/2 teaspoon cayenne pepper (or chili powder)
  9. Salt to taste
  10. Olive oil for cooking

Cooking Procedures
  1. Add all ingredients to a food processor, and blend until mixture comes together. Taste for seasoning and adjust accordingly.
  2. Transfer mixture to a bowl, cover with plastic wrap and let the mixture chill in the refrigerator for 1 hour or up to a day. (If you're pressed for time, you can skip this, but I like chilling them for as long as possible to let the flavors meld.)
  3. Make the veggie burger patties. Using a 1/4 cup measure, scoop the mixture to form a round patty. Using you hands, form the patties with 3/4-inch thickness and about 2 1/2-inch diameter. Repeat with remaining mixture and set the patties aside.
  4. Heat a 10-inch skillet over a medium-low flame. When pan is hot, add a bit of oil. Gently transfer the patties to skillet and cook about 5 to 6 minutes on each side, until each side is lightly browned.
  5. Transfer cooked patties to a plate or platter lined with a paper towel. Allow the paper towel to soak up any unwanted oil.
  6. Serve the spinach burgers with toasted buns, over a salad or on their own! I also like serving them sriracha, tahini, or mustard.                 

Nutella Babka




Ingredients

  1. 4 ½ cups flour
  2. 1/3 cup sugar
  3. 1 tbsp yeast
  4. 1 tsp sugar
  5. ½ cup lukewarm water
  6. ¾ cup plus 2 Tbsp butter or margarine, melted
  7. ½ cup milk or almond milk
  8. 2 eggs
  9. 2 tsp vanilla
  10. 1 tsp cinnamon
  11. Chocolate hazelnut spread such as Nutella
  12. 2/3 cup water
  13. 1 cup sugar
  14. 1 tsp vanilla


Preparation


  1. Place yeast and sugar in a small bowl. Add lukewarm water and set aside until foamy, around 5-10 minutes.
  2. In a stand mixer fitted with dough hook, mix together flour, sugar, vanilla and cinnamon.  In a separate bowl, mix together melted butter (or margarine) and milk (or almond milk).
  3. Put mixer on low and begin adding the water yeast mixture, then the butter-milk mixture. Add the eggs one at a time.
  4. When the dough begins to come together, after about 3-5 minutes, raise the speed to high and mix for another 5-10 minutes until the dough is shiny and elastic.
  5. Place dough in a greased bowl with a damp towel on top. Allow to rise until it has doubled, about 1-2 hours.
  6. Preheat oven to 350 degrees.
  7. Cut dough into three equal parts. Roll out dough until it is a rectangular-like shape. Spread with chocolate-hazelnut spread. Working from the longest side, roll up dough using quick fingers, like you would in order to make cinnamon rolls.
  8. Once the dough is a long log, cut it straight down the middle so the filling is exposed. Secure the ends on one side, and twist both the pieces . Pinch and secure at the other end.
  9. Place in a greased loaf pan.
  10. Bake for 35 minutes.
  11. While the babka is baking, combine 2/3 cup water, 1 cup sugar and 1 tsp vanilla in a small saucepan. Bring to a boil on medium-high heat. Once it comes to a boil, remove from heat and swirl around to ensure all the sugar is dissolved.
  12. About 20-25 minutes into baking, spoon about half the syrup onto the baking babkas.
  13. When you take the babkas out of the oven after they have baked completely, immediately drizzle brush the remaining syrup on top of all three babkas. It may seem like a lot of syrup, but this ensures a moist and gooey babka.
